Valentine’s Day is known to be a day full of love, appreciation and sweetness. Some people like to give flowers, others handwritten notes, but the best kind of gift comes in a sugary form. Cookies are a classic sweet treat, and brownies satisfy a craving for chocolate, so combining them makes the perfect dessert. These Valentine’s Day brookies are a unique and tasty way to show appreciation for your friends, family, and significant others.

Total time: 45-60 mins
Prep time: 20-30 mins
Cook time: 25-30 mins
To make these tasty treats you will need ingredients for both layers.
For the brownie layer:
1/2 cup (1 stick) unsalted butter, melted
3/4 cup granulated sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1/3 cup natural unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
For the cookie layer:
1/2 cup (1 stick) unsalted butter, softened
1/2 cup granulated sugar
1 large egg, room temperature
1/2 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
Pink or red food coloring
Optional (but highly suggested) toppings:
Valentine sprinkles
Chocolate chips
Ice cream (flavor of your choice)
Let’s start baking:
- Preheat the oven to 350°F (175°C). Cover an 8×8 inch baking pan (or a cute heart container) with cooking spray, butter, or parchment paper
- Make the brownie layer: In a medium bowl, whisk together melted butter and sugar. Once smooth, beat in the eggs one at a time, then stir in vanilla extract.
- Gently fold in cocoa powder, flour, and salt until everything is combined. Be careful not to overmix
- Pour brownie batter evenly into the prepared pan.
- Make the sugar cookie layer: In a separate bowl, cream together the softened butter and sugar with a mixer until light and fluffy. After, add in the egg and vanilla extract until smooth.
- Fold in the flour and baking powder until soft dough forms.
- Add pink or red gel food coloring a drop at a time, mixing until the perfect Valentine’s Day color is achieved
- Drop spoonfuls of the pink sugar cookie dough randomly over the brownie batter.
- Using a butter knife, gently swirl the two batters together with figure-eights, loops, and zigzags to create marbled patterns.
- If using, sprinkle Valentine sprinkles or chocolate chips on top.
- Bake for 25-30 minutes. Look for firm edges with a slightly soft center.
- Remove from the oven and let cool completely in the pan on a wire rack
Once cooled, you can cut, serve, and add any other additional toppings that you like, such as ice cream or whipped cream. Make sure to enjoy it with your loved ones, and let them know how much you appreciate them this Valentine’s Day!
