With warm weather beginning to stick around, it gets harder to wait for summer’s arrival. The crisp air outside can make it easy to wish for pool days, tanning outside and, of course, no school. Though there’s no way to speed up the clock, the wait for the upcoming season can be made enjoyable while baking and delighting in these quick, soft honey cookies!

Ingredients
- 4 oz (1 stick) salted butter
- ½ cup sugar
- ½ cup honey
- 1 large egg
- 1 tsp vanilla extract
- ¼ teaspoon salt
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- 2 ½ cups all-purpose flour
Time to combine!
- Preheat your oven to 350°F, and line a baking sheet with a layer of parchment paper.
- Heat the salted butter in a saucepan over medium-high heat until it browns. If you don’t have salted butter, add ¼ teaspoon of salt to unsalted butter and then melt that.
- Add in the sugar and the honey, switching to low heat until the sugar melts. After that, take the saucepan off the heat and cool it to room temperature. (Tip: to speed up the cooling process, transfer the mixture to a large mixing bowl and put it in the fridge for 15 minutes)
- Add the egg, vanilla extract, salt, baking soda, and cinnamon into the honey-sugar mixture and mix well.
- Gradually add in the flour, stirring well.
- Place cookies (roughly teaspoon size) 2 inches apart onto the baking sheet.
- Bake for 8-9 minutes or until golden. Be sure not to overbake! The edges should only be slightly golden.
- Let the cookies cool for 5-10 minutes before removing them from the baking sheet.
- Enjoy! You can have these either as-is or customized with toppings—mini chocolate chips, sprinkles, nuts, drizzled caramel, or anything else you would want.
